- 2 tbsp Extra virgin olive oil
- 3 Very ripe tomatoes
- 1 White onion
- 1 tsp Ground cumin
- 2 Large organic eggs
- Parsley to taste
- Red chilli
- Garlic

- In a large frying pan over medium heat, warm the olive oil and then add the chopped tomatoes, chopped white onion, chopped garlic, red chilli to taste and cumin. Saute for about 15 minutes, until the onion is soft. At the end chop and add the parsley.
- Put it in a small ovenproof dish and add 1 or 2 eggs on top. Cook in the oven for less than 5 minutes until the eggs are cooked. Be careful not to over cook them!
