- 50 g Frozen petits pois
- Large handful of baby leaf spinach
- Virgin olive oil
- 3 Small bunch of spring onions, trimmed and sliced
- 4 Large eggs
- Small handful of parsley, chopped
- 30 g Hard goat’s cheese, grated
- 1 pinch Himalayan salt and black pepper

- Bring the frozen petits pois to boil in a small pan and then drain and put to one side.
- Lighly fry the spring onions and the spinach (until it wilts down) in the butter or oil.
- Beat the eggs, add salt, pepper and the peas. Pour the mixture into the pan with the spring onions and spinach.
- When the base of the omelette is set and the top still slightly wet (but not runny), scatter over the parsley and the grated cheese.
- Cook for a minute more, then flip over one side of the omelette so it is folded in half, slide it out of the pan and serve.
