- 1 Small red onion, finely sliced
- 1 Garlic clove, finely sliced
- 300 ml Water
- 1 Medium sweet potato, cubed
- 3 Large vine tomatos, quartered
- 1 Bay leaf
- ¼ Red chilli, finely chopped
- ½ tsp Ground cumin
- Pinch cayenne pepper
- ½ Aubergine, cubed
- 1 Can chickpeas
- Sprig coriander, roughly chopped
- Extra virgin olive oil
- Himalayan salt and black pepper

- Soften the onion and garlic in the olive oil on a medium heat.
- Add 25ml of water and stir in the sweet potato, the chopped tomatoes and bay leaf and cook for 5 minutes.
- Add the chilli, cumin and cayenne and 150ml of water and simmer/reduce for 15 minutes.
- Add the aubergine, chickpeas and remaining water and simmer for a further 10 minutes, occasionally stirring. When the aubergine is tender, take off heat, and serve with chopped coriander.
- Serve with brown rice, quinoa or millet and green salad.
