- 150 g Brown rice
- 2 Smoked mackerel fillets, skinned and flaked
- 1 Onion, diced
- 1 Small bunch of parsley, roughly chopped
- 1 tsp Tumeric powder
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1 tsp Chilli flakes (or to taste)
- 2 Eggs, hard boiled and chopped in half
- Himalayan salt and black pepper
- Lemon juice
- Extra virgin olive oil

- Soften the onion in the butter and a dash of olive oil. Stir in the spices and keep stirring for about a minute.
- Add the cooked rice to the onion and spices and a little more olive oil if it seems too dry.
- Add the flaked fish and parsley and stir everything together and then season to tase, with a sqeeze of lemon juice.
- Warm everything though and keep stirring, and then plate up with the boiled eggs on top.
- Serve with a watercress and avocado salad.
